Chocolate Blueberry Protein Pancake!

Yumm! Chocolate blueberry protein pancakes! With  very minimal ingredients!

You’ll Need:

1 Cup Oats

7 Egg Whites

1-2 scoops chocolate protein powder of choice ( I used Vega Protein )

1 Medium Banana

1 cup of berries of choice (for this I used blueberries)

1 tbsp. Almond butter

2 tbsp. Coconut oil

How to:

Cook Oats as directed.

Meanwhile, mash up banana (it helps if you mash it first, learned this the hard way!) And add egg whites, protein and peanut butter. Mix all into the Oatmeal.

Place a medium size  skillet on medium heat in the coconut oil. Let the pan heat up and pour some batter on to the skillet. Sprinkle berries on top of pancake before you flip. Cook till you see bubbles forming at the top. (these type of pancakes take longer to cook because they are more dense.)

Top with more berries and 2 tbsp. Agave Nectar!

Vanilla Blueberry Smoothie!

You’ll Need:

1/4 Cup Almond Milk

4 Ice cubes

1/2 cup frozen yogurt (Greek, or dairy free. Vanilla or blueberry flavored)

1 teaspoon of Agave Nectar

1 cup frozen or fresh blueberries

1/2 banana

1/4 cup black berries

Blend all together and enjoy!

** Easier to blend all ingredients and then add ice! **

Blueberry Punch (Alcoholic Drink)

So I got a request for a “healthier cocktail” And since I cant drink right now, I found this in a magazine! So if ya’ll make it, let me know how it is!!! Looks soo good! ( also moderated it a little too to make it more “healthy” but it was inspired by a drink in SELF magazine. )

 

In a small saucepan, bring 1/2 cup blueberries, 1  tbsp. stevia, and 1/2 cup water to boil.

Cook for about 1 minute , breaking up the blueberries. Strain the syrup reserving the liquid and let cool for about 10-15 min. (you should have around 1/2 cup of syrup)

Fill a pitcher with ice and add blueberry syrup, 2 cups of sparkling water and 6oz elder-flower flavored liquor. (they suggest St-Germans) and stir all together.

And serve! (should serve about 4)

177 calories. 22 g carbs.

Love me some blueberries, and I have to eat them fast because my boyfriend will down a whole carton y himself if I don’t! These little guys are antioxidant heroes!

Very Berry Smoothie

You’ll Need:

1 cup Mixed Berries – I like the 365 Brand at Whole Foods, but any kind will do.

1 Banana

1 cup Orange Juice

1/2 Cup Cherry Juice

1 teaspoon Flax Seed (ground or whole, your choice)

Blend all together and Voila’! YUMMM

Rasberry-Banana Bites!

Depends on how many people your going to serve, so estimate how much you’ll need that way. (3 pieces is about 80 calories)

2 bananas  (cut into 1-inch pieces)

1 container of red raspberries (other fruits that are good= blueberries, strawberries, and blackberries)

about 1/2 cup of almond butter (you can use peanut butter, Nutella or any other butter too if you choose) .. I like the Justin’s Chocolate Hazelnut butter too!!!

Assembly: Place a small dollop on almond butter on top of banana chunk and top with raspberry!
