Lemon & Garlic Kale Chips

So with my diet being pretty limited to veggies and meat mainly haha, I’m always looking for new ways to spice it up!!! So I made KALE CHIPS! … (even my boyfriend liked them… which was a surprise! ) <— ps. I love when he likes my health food hahah.

Ok enough bibble -babble! On to the Recipe!!!!

Its suuuper simple too. YAY!

You’ll Need:

  • 2 tbsp. Extra Virgin Olive Oil.
  • A bundle or two of fresh kale, washed and chopped.
  • 6 Garlic cloves, chopped. (or more if ya want… I’m a garlic freak so if you ever ask me… you can never have enough garlic!!!)
  • 1-2 tbsp. Sea Salt (one if you use one bunch, 2 if you make 2 bunches worth)
  • 2 tbsp. Lemon juice or one whole lemon freshly squeezed.
  • 1 tbsp. Black pepper

 

How to:

  • Wash Kale bunches and chop off ends, and then chop into “chip” size pieces.
  • Pre-heat oven to 325
  • In a large bowl mix all ingredients. (Olive Oil, Lemon, Salt, Pepper)
  • Place chopped up kale into bowl and mix around so the oil gets all over it all and you can even let it marinade for a while if you’d like. ( I let mine marinade for about 15 min)
  • On a baking sheet, spread out kale pieces onto sheet and then sprinkle the chopped up garlic cloves on top.
  • Bake for about 15-20 min until the kale pieces seem crispy at the end.
  • Let cool, and ENJOY!!!

Note: it helps if you every once in a while toss the leaves so some don’t end up burnt.. ( you know the ones on the sides of the pan) . …. lol.

Green Mango Tango Smoothie

Made this the other day! so good and couldn’t even taste the spinach!

You’ll need:

  • 2cups almond milk
  • 1 scoop protein powder (I used Vega’s Mango Tango Smoothie flavor… but vanilla would be good too)
  • 1 tbsp. almond butter
  • 1 1/2 cups of frozen mango chunks
  • 2 cups of spinach

blend all together and voilà!! yum . great for a mid day pick-me-up or even for breakfast!

Green Tea Extract

So whether you take it in a pill form or drink it as a cup of tea, green tea is very good for you! Green tea is good for clearing your mind, making you more alert and keeping focus. But its also used as a weight loss supplement, help with headaches, stomach disorders and is even know to help prevent some forms of cancer. Some other great things green tea extract is also known for is reducing high blood pressure, prevents inflammation, slows down aging and can also help prevent liver disease.

How its aids in weight loss:

  • Well since there is a natural amount of caffeine in it, there is an increase in energy obviously so therefore you’ll ether have a bit more momentum to get up and go workout and/or work harder during your workout.
  • Its known to help burn fat and increase your metabolism. (that is if your eating correctly and getting in some form of physical activity every day)
  • You can take green tea in a few different forms and still get the same benefits. 1. There is the basic tea, they recommend drinking around 3 cups a day. 2. Pill form- any health food store (Sprouts, your local grocery, Whole Foods, Vitamin Cottage) will carry this product. They recommend taking anywhere from 250-700mg. My suggestion, start at 250 and slowly build to see what’s a good dose for you.
  • Keep in mind that green tea is a natural diuretic too, so be prepared to go to the bathroom more, and be prepared to slam more water throughout the day because you’ll need to replenish the water loss you loose.

Benefits of Olives!

Green or black, olives are great for you! Just keep in mind moderation is key with them because they are higher in fats

  • Some key things that olives help with that they are very rich in mineral content. (phosphorus, iron, magnesium, iodine.. to name a few)
  • They also oleic acid which is beneficial to helping the heart.
  • They provide essential amino acids and vitamins.
  • Cancer Fighting Properties – particularly colon, breast and skin cancer. They are higher in monounsaturated fats, which can help reduce inflammation.
  • Good source of fiber
  • They are known to act as a pain reliever, mimicking the same affect ibuprofen would have on your body. A compound called oleocanthal is what causes this, lowering any inflammation.

Things to put olives on or add with:

  • In a salad
  • In scrambles egg whites or an omelet
  • Add into burritos or any Mexican dish (my fav is fajitas!!)
  • Have plain as a snack
  • Cut up and put into hummus
  • Take a piece of toast put some guacamole or hummus on it and top with sliced olives
  • Put on top of a potato

Ps Olives are my favorite food, a get a case of them every Christmas! =)

Benefits of Bell Peppers!

Love bell peppers, whether they are in a salad, sautéed, stuffed of just dipped in some hummus… LOVE them!

Why they are awesome:

  • Help prevent against cancers, disease, inflammation and cell damage.
  • Awesome source of vitamin A and C.
  • Very low in calories so virtually you can eat like 3 whole peppers without many calories, plus they are nutrient-dense so they fill you up!
  • Skin looks healthy and glowing (because of the Vitamin A and C).
  • They are sweet on their own! Great for desert… yes I have ate bell peppers for desert.. call me weird. I don’t care lol.
  • There is keratin enzymes in bell peppers, great for keeping eyes healthy.
  • Good source of fiber.

How to pick the best!!:

  • Find peppers with the brightest colors. The brighter, the more ripe and sweet!
  • Cool fact: The green, yellow and orange peppers you see, are actually RED peppers that haven’t ripened yet! What?! I know! Fun little fact! (there is nothing wrong with eating the other colors btw)
  • Pick peppers with a glossy shine to them.

How to eat and prepare: YUMMM

  • raw
  • raw dipped in hummus, salsa, or even guacamole.
  • sautéed
  • sautéed for fajitas
  • Cut the top off and stuff them with veggies and rice- bake.
  • In salads
  • Add to sandwiches.
  • Make stir-fry
  • Add to soups
  • In pasta dishes.
  • Grill them – make kabobs!
  • And many other ways! Get creative !!! =)

BEST Green Vanilla Smoothie!

OMG DELISH!! – I was in the kitchen one morning wanting to make a green smoothie and just started adding random stuff and it turned out pretty damn good !

You’ll Need:

1 cup Almond Milk (unsweetened)  *

3 1/2 cups spinach

2 tbsp. Almond Butter

1 Scoop of Vega Vanilla Almond Protein Powder (or any other kid works too- vanilla flavor) *

1 tsp. chia seed (optional)

*** Keep in mind I have a dairy allergy personally so any of my recipes, you can substitute Almond milk and the protein powder with low-fat milk and a powder of your choice. ***

Blend together and ENJOY!

…………..and it will keep you full pretty long !!

Roasted Asparagus with Lemon and Chives (WW)

You’ll Need

1 (1 pound) bunch of asparagus, trimmed at the ends

2 teaspoons of olive oil

1/4 teaspoon salt

1/8 teaspoon pepper

1 tablespoon lemon juice

2 tablespoons of chopped fresh chives

  • Preheat oven to 425 F
  • Put asparagus into shallow roasting pan. drizzle oil over asparagus and sprinkle with salt and pepper, toss to coat evenly .
  • Place in oven, shaking pan occasionally until tender and browned in spots ( About 20 min) .
  • Transfer asparagus to platter and sprinkle lemon juice and chives on top.

SERVES 4 :   WW points 1    PER SERVING: 4-6 spears
