Avocado, Garlic,and Zucchini Pasta!

Yeah its been a long time, sorry lol… life happens.

Been craving pasta like a mofo so I made this and decided to share it with yall! YAY FOOD!

completely clean and simple long with all from natural sources. (Another thing I’m looking forward to doing and getting more into again … Holistic Nutrition! … Having our own house will help too!! – yes I have a lot of catching up to do lol… )

So if you only want the recipe, scroll below to see its amazingness! … but this Thanksgiving Evan and I got ENGAGED! .. Not that it was due time, I never have been the type of girl to ever pressure him either, not my style. Knowing that he’s my person and it will happen when its time to happen kind of thing =) Plus, I thought we were on mission get a house!! lol……

PS!! So excited for my own kitchen and to have a garden!

With the recent events that happened before, I completely have a rather simple perspective on life now. Not that life is simple for me, hell buying a house, planning a wedding, planning on going back to school and looking at a personal trainer certification…not to mention supporting Evan in his goals and life, and just juggling the day in general… things aren’t exactly what some would say would be “simple” … but the more I just let go of things I cannot change, the easier and “simpler” it gets!

So yes! I have A lot ahead of me, but I’m excited to take it on, to embrace it and truly go after what I want in life, everything from the career, love, education down to just having Netflix night with my soon to be HUSBAND.. ( wow that seems strange saying lol….) Bring it All on!

The reverse diet update is that I’m officially up to 1800 calories, losing weight with more food added into my life, I even got to introduce a small amount of dairy back in and I’m not dying!! That’s exciting right there! .. So looks like the metabolism is naturally and slowly fixing itself which gives me more excitement towards these next few years before I decide to have kiddos… ( yea.. I’m almost 27, in one week actually) and.. well I want babies! lol.

so anywho1 that’s what’s new and happening. Like I promised before, the recipe below!

What yore gonna need yo!

  • 1 avocado
  • 1/8 cup chopped sweet yellow onion
  • 5-6 zucchini or yellow squash ( I’m sure cucumber would be amazing too!!! – just saying )
  • 1 garlic clove, minced
  • splash of water
  • 5-8 baby heirloom tomatoes (cut in half)
  • fresh basil leafs
  • salt and pepper to taste.
  • 1 lime

How to:

  1. start your steamer and begin to spiralize your zucchinis, making “noodles”. put “noodles” into the steamer.
  2. in a food processor, ( I actually used my small 1 serving blender , took a little longer but it worked lol) place avocado, 1/4 of lime ( squeezed, obviously) a few basil leafs, garlic, onion, and water. the more water the more “liquid-y” it will be lol, I left mine pretty thick. =)
  3. Place some noodles on a plate, add a 1/4 of the avocado sauce into the noodles, mix in tomatoes, more basil leafs if you’d like and salt and pepper! Add in come lean chicken breast, shrimp, or any other protein .. or just eat it like it is!!

Baked Garlic & Herb French Fries (no oil)

Story time first! … (recipe is below if you don’t want to hear my story lol… but I think it was kinda funny personally)  Ok so my boyfriend actually has been doing pretty good through this whole “I want to do a competition” thing. Hes been helping with food prep, supporting me when I lose my shit and dealing with my low-carb mood swings haha. I’m very blessed, that’s all I have to say! … so anyways…..We were driving around and it was becoming dinner time soon for him anyways ( I still had like 2 more meals to eat) But for the most part he’s been eating what Ive been eating give or take some extra carbs or something for him… So the other day he was like “I’m gonna get Good Times” and kind of gave me a look of “please don’t hate me … and is that ok?” lol and I understand … I’m not going to deprive him from things just because I have a goal… its not his goal he can eat/do what he wants… So we order it and he gets the bag and puts it in-between himself and the driver-side door so its not staring at me in the face (aww so considerate)…. So I’m all “you can put it on the center console so it doesn’t fall and spill everywhere” so he does…

I literally looked out the window because all I can smell is those fries… (and if you know me, I’ve never really been a fry fan anyways … but ohhhh Good Times fries just sounded good.. ) .. so I looked down and there is seriously a little fry sticking out of the bag, I swore it was like mocking me. hahha.

So I looked at him and was like .. ” yeah put this back over to your side and we need to go home NOW, so I can make my chicken and asparagus” lol… he just laughed at me and headed  home…. So that’s my story.. I think it was funnier in person, oh well… but anyways I made these and they weren’t “Good Times” fries, but they definitely curbed that craving!!!  ENJOY!

Recipe:

You’ll need:

As many potatoes as you want ( I used Red Gold for this and I only used 2 potatoes total… but then again I can only have so many carbs right now … so keep that in mine, One potato this size measures out to be about 1 cup)

and Mrs. Dash Garlic and Herb Seasonings …

THATS IT! BOOM!  ( p.s. I love minimal ingredient recipes!!! )

How to:

  • Put potatoes into desired shapes or slices
  • Pre- Heat Oven to 345
  • Lay a piece of parchment paper onto a baking sheet and spread out the potato chunks evenly on the baking sheet.
  • Sprinkle Ms. Dash seasoning onto the pieces – jut enough to lightly cover them (it helps if you flip them too so the seasoning gets everywhere)
  • Bake for about 20-25 min depending on how fast your potato cooks. … (I did turn on the broiler for out 5 min just so they came out a little more golden and crisp! )
  • Let cool and Enjoy!

Side note: You can basically do this with any potato and any seasoning, no need for oil which helps save on calories!! =) – I might try a southwest Chipotle seasoning next time!

Also, I found a lower sugar Ketchup that’s not too bad either!  But different flavored mustards are delish too!

Going Gluten Free! (How to, What to buy)

So a lot of people are currently already gluten free or going gluten free. Here is a shopping list for all the things you CAN eat when going gluten free so it doesn’t seem so scary and overwhelming! =) Enjoy!

Also here are some things “gluten” is otherwise called on labels. Read them!! So these are the “no-goes”. Also I listed some basics that are a “No” as well. . . . .

  • Wheat, Barley and Rye
  • Brewers yeast
  • Kamut
  • Malted milk (or virtually any thing with the work “malt” in it.)
  • Oats (there are gluten free oats now, just have to find them)
  • Spelt
  • Wheat bran
  • Flour
  • Gravy’s
  • Some crackers

Here are some things you might want to check out before buying, they or may not contain gluten depending on the product and brand:

  • Oatmeal
  • Beer
  • Bread and Pastas
  • Noodles
  • Cereals, cereal bars
  • protein bars and powders
  • Some flavored coffees and teas
  • Seasonings and sauces
  • Salad dressings.

So what the hell can I eat, You maybe be asking? …

  1. Produce! Any fruits, veggies and all the above! lol
  2. Herbs and Spices (be sure to look at some marinades and rubs, some contain gluten!)
  3. Meats and Fish (beef, chicken, fish… check the package for additives, and if you can buy grass fed you’re better off)
  4. Oils, Mayo, Mustard, salad dressings (check labels) .
  5. Dairy products like milk, cheese, yogurts, sour cream, cottage cheese, butter.. A lot of non-dairy as well like Almond milks and yogurts
  6. Eggs, egg whites, and tofu
  7. Rice cakes, pop chips, rice crackers, jello, chocolates, dried fruits (check labels) .
  8. Quinoa, buckwheat, flax, seeds, almond flour, there are even pre-packages brownies!! Yum
  9. Peanuts and almond butters, nuts
  10. Juice, coffee, teas
  11. Puffed rice cereal, Chex mix cereal, there are special gluten free cereals too.
  12. Look for special “gluten free ” foods too! There are more options now!!

Here are some Awesome “gluten- free products” that are already out there. Most of them you can find at your local supermarket, Whole foods or farmers market! Shop around, try new stuff and .. in a way have fun with it! Don’t get overwhelmed and be positive! Also Google recipes, get in pinterist or intagram..  find blogs (I have a few recipies on there that are gluten free too) .. get a cook book. Have fun with it!

  • Breads – I like udis (they have different kinds too)  . But there is also Kinnikinnik Foods Brown Sandwich Bread, Whole Foods Market brand makes a bread, Food for life brown rice bread, EnerG Tapioca bread and Glutino brand.
  • Cereal – Chex rice, Natures path, Enjoy life Brand , Rice Crispies, Barbara’s brand, Arrohead Mills, and I believe Kashi makes a few too!
  • Pasta- I love Quinoa pasta the best, but there also is veggies pasta, brown rice pasta, you can also make pasta out of spaghetti squash!
  • Oats- bobs red mill, udis,
  • Begals- vans naturals, udies, .. they even have waffles!! YES!
  • Pre-made Meals – Amys brand is good, Boars head brand, … this stuff is usually pretty pricey so you learn how to make your own “gluten free” foods pretty fast! ahaha.
  • Brownies and goodies! – Betty Crocker makes brownies and cake mixes, udis, French meadow bakery, bobs red mill..

Zucchini Bread!!! (dairy-free,egg-free, gluten-free, vegan)

LOVE Zucchini Bread!!! SO ..here’s a more healthier option when it comes to some yummy bread for maybe a party or even a small snack!

You’ll Need:

3 Zucchinis (shredded)

2 tablespoons of ground flax seed mixed with 5 tablespoons of water in a separate small bowl (this is your “eggs”)

1 1/2 cups of Gluten free flour (or if you don’t need it to be gluten free, another great option is whole wheat flour)

1/2 cup Olive oil.

1/2 teaspoon salt

1/2 cup agave nectar

2 teaspoons of pure vanilla extract

2 teaspoons cinnamon

1/2 teaspoon baking powder

1/2 teaspoon baking soda

(Optional ingredients include: Raisins, Walnuts, Chocolate chips…get creative!!)

How to:

Pre-heat oven to 350

In very small bowl, mix flax sees and water in bowl and set aside so it gets thicker and kind of “goopy”

Next, in large bowl, mix olive oil, vanilla, cinnamon, agave, “egg” mixture, salt and shredded zucchini into bowl. Mix well.

Then add Flour, baking soda and baking powder into same bowl and mix until all ingredients are wet.

Coat baking pan with cooking spray, and pour mixture into blow and bake for about 20-30 min depending on how big the pan is. Bake till a toothpick or knife comes out clean without mixture on it.

** I cut a slice and topped it with a tiny drizzle of natural honey** So good**
